This Huevos Rancheros Shakshuka Recipe is quick, easy, and gluten-free! There is an extra spicy kick from the spices in our ready-to-go Huevos Rancheros that is unmatched to anything else!

Traditional shakshuka is made with a hearty tomato sauce (or chopped tomatoes), seasonings, peppers, onion, garlic, and eggs. It is filling, flavorful, and 100% satisfying. But, we were craving a little Mexican twist on the classic this morning and came up with this dish!

Our Huevos Rancheros is made with our signature poblano-guajillo salsa, which replaces the traditional tomato sauce. We then added in traditional Mexican items such as black beans, steamed rice, egg whites for protein, and corn tortillas for the final touch.

To turn the huevos rancheros into shakshuka place the pre-made bowl into a skillet. Then crack 2-3 eggs on top of the huevos rancheros in the skillet. Sprinkle with extra sauce, cheese, and purple onion, if desired. Put it into a pre-heated oven at 450 degrees Fahrenheit and allow it to cook for 10-12 minutes or until the huevos rancheros are heated through and the eggs are to your desired doneness.

If you enjoy a kick, finish the dish off with fresh jalapeno and more diced red onion if desired. Serve immediately with some thick slices of freshly toasted bread. The bread is the perfect vessel for soaking up the delicious sauce.

You can easily double or triple this recipe to serve a larger crowd! If you are serving this for a large Sunday brunch, add some fresh fruit and mimosas to round out the meal.

Instructions

  • Preheat oven to 450 degrees F.
  • Open your Huevos rancheros package and place into oven safe skillet.
  • Top with extra sauce and cheese, if desired.
  • Crack 2-3 eggs on top.
  • Bake for 8-12 minutes or until desired doneness.
  • Top with diced purple onion and jalepenos, if desired.
