Instructions

  • Preheat oven to 450 degrees F.
  • Partially cook your Chicken Black Bean Bowls.
  • Place your pizza crust on a baking sheet.
  • Top the pizza crust with your Chicken Black Bean Bowls and shredded cheese.
  • Bake for 8-10 minutes or until cheese is melted and pizza crust edges are golden.
  • Allow to cool slightly before slicing.

We love to try and eat seasonal, which is why we love enjoying this stuffed zucchini recipe during the summer. Zucchini is at its peak and, boy is it delicious!  We grab 2-3 medium zucchini at the local farmers market intending to make zucchini bread but almost always end up making these zucchini boats instead.

Weeknights get crazy. Who can blame us for turning to this recipe over a bread recipe? All you need is 10-15 minutes, depending on how big your zucchini is and you can have this flavorful and easy meal on the table. This recipe serves one to two people, depending on if you eat it alone or with a side dish.

When we need something fast, we enjoy these as is. However, we love to pair these low carb zucchini boats with a farmer’s market fresh salad to make a quick meal.

To make these ‘boats,’ all you need to do is scrape out the center of your zucchini, stuff them with the Chicken Black Bean bowl, top with cheese and then bake until bubbly! Once they are done cooking, remove them from the oven and then pick them up and enjoy. You can use utensils, but we are all about saving on dishes.

You can use the flesh from the center of the zucchini in your side salad or saute it in a bit of olive oil and serve it alongside your breakfast burrito the next morning for a quick and balanced start to your day. Instructions

  • Preheat oven to 375 degrees F

Instructions

  • Prick potatoes all over with a fork or sharp knife.
  • Wrap in a damp paper towel and microwave for 8-10 minutes or until fork-tender. (You can also cook these in a 400-degree oven for about 1 hour).
  • Remove the paper towels and cut a slit lengthwise in the top of each potato.
  • Scoop out the center leaving a 1/2 inch around the skin.
