Spice up brunch with The Best Huevos Rancheros ever! This easy to make tostada type breakfast can be topped with cheese, avocado, cilantro and fresh lime for a fast and flavorful meal!
Huevos rancheros are the most perfect (vegetarian) meal. They are traditionally a combination of corn tortillas, refried beans, eggs, rice, salsa, and guacamole. However, we gave this Mexican dish our own spin. We added poblano peppers for flavor, swapping the eggs for egg white (in the base), and finishing it off with melted cheese and cilantro.
To give this recipe a little more of that “homemade” taste, we added a freshly cooked egg. The runny yolk really adds an additional layer of flavor. Then we finished the plate off with fresh avocado (everything is better with avocado, don’t you agree?), fresh jalapeno, and a squeeze of fresh lime! You won’t believe the explosion of flavors that are happening.
Huevos Rancheros are traditionally served for breakfast; however, this easy to make dish would also work well for lunch or dinner. We like to pair it with some fresh crusty bread for dipping up all of that yummy salsa at the end.
The beans and the egg whites add a nice punch of protein to this breakfast dish. Plus, you get fiber from the beans, too! This is the kind of meal you make when you have a real craving for comfort food, but don’t want to spend the time in the kitchen cooking.
The eggs and extra toppings in this recipe are ‘optional,’ but very highly recommended. You can also make your own homemade twist by layer corn tortillas, refried beans, salsa, eggs, and cheese. It’s a brunch recipe that the whole crowd will be asking for again and again.

- Cook Huevos Rancheros according to package direction.
- Cooke eggs as desired. We prefer fried eggs for this dish.
- Top with avocado, cilantro, lime, jalapeno and cheese.
