Fall always brings an abundance of squash that all have their unique flavors. One of our favorites is spaghetti squash. It takes to almost any flavor you add. It’s also easy to cook and makes the best vessel for fun meals like this Steak Black Bean Stuffed Spaghetti Squash recipe.

This recipe is satisfying without being too heavy. But don’t worry, you still get that cozy comfort food feel! They spaghetti squash may bet lighter than traditional pasta, but it is much more filling. Of course, the hearty steak pieces from our Steak Black Bean Bowl and the cheese on top seal the deal.

Depending on the size of your spaghetti squash it could take some time to bake. So, we like to prep our spaghetti squash ahead on Sunday during meal prep so that we can whip up this meal in no time during the week.

If your squash is already cooked, it is just a matter of heating your steak black bean bowl, tossing on some cheese and extra veggies, if desired and then baking until golden and bubbly.

This recipe works great with our other bowls too! We have made this with the Chicken Black Bean Bowl more times than we can count! It’s our favorite when topped with white cheddar.

2 small spaghetti squash, cooked

3 Steak Black Bean Bowls

1/2 cup shredded cheese of choice

1/3 cup fresh tomato, chopped

1/4 red onion, thinly sliced

fresh cilantro, if desired

Ingredients

  • 2 small spaghetti squash cooked
  • 3 Steak Black Bean Bowls
  • 1/2 cup shredded cheese
  • 1/3 cup tomato diced
  • 1/4 cup red onion thinly sliced
  • fresh cilantro if desired

Instructions

  • Preheat your oven to 400 degrees F.
  • Cook Steak Black Bean Bowls according to package directions.
  • While bowl are cooking, scrape the insides of your squash out into a mixing bowl (See notes below if you are unsure to prepare your squash)
  • Place the spaghetti squash shells on a baking sheet.
  • Once your bowls are done cooking, add them to the bowl with your spaghetti squash and mix well.
  • Evenly divide the mixture between the 4 empty spaghetti squash rinds.
  • Top with shredded cheese and red onion.
  • Place the baking sheet into the oven and bake for about 10 minutes or until cheese is melted.
  • Finish off with fresh cilantro, if desired.

We really, really, REALLY love sweet potatoes. They pair so nicely with everything! Sometimes we serve them up french fry style with one of our breakfast burritos, other times we serve them up in hashbrown form with a scramble bowl. But, our favorite way to eat them is stuffed just like this Steak & Black Bean Bowl Stuffed Sweet Potato recipe. It’s easy, it’s filling, and 100% cozy for chilly days!

We have been enjoying stuffed potatoes in all forms for quite a while. But, once we took one forkful of this loaded sweet potato filled with chunks of juicy steak, fiber-rich black beans, tender rice, rancheros sauce, sharp cheddar cheese, and extra feta, we knew we had hit a home run!

We like to meal prep up a bunch of sweet potatoes on Sunday to make creating these stuffed sweet potatoes super fast at night! Some days we pack one of the pre-cooked potatoes and a breakfast or entree bowl so that we can make these while at the office, too!

This recipe also delivers a great balance of slow-digesting, fiber-rich carbs, protein, and healthy fats. This is the trifecta for creating a satiating meal.

Ingredients

  • 2 medium sweet potatoes baked
  • 1 package Steak Black Bean Bowl
  • 2-3 tbs cheese if desired (queso, feta, goat cheese)
  • fresh cilantro optional

Instructions

  • Reheat potatoes if previously cooked and cooled
  • Cook Steak Black Bean Bowl according to paclage directions.
  • Cut a slice into the top of each potato.
  • Fill each with half of the cooked Steak Black Bean Bowl.

Steak & Black Stuffed Peppers

Stuffed peppers might seem fancy, but they are really just a fun way to serve up peppers! They are easy, delicious, and a perfect way to impress both family and friends.

We filled the peppers with our Steak & Black Bean Bowl, which is pre-made with fire-grilled steak, southwestern-style veggies, black beans, rice, rancheros sauce, and sharp cheddar cheese. But, you could always opt to go with our Chicken Black Bean Bowl instead. Or, give this recipe a fun breakfast twist by using one of our breakfast scramble bowls! It’s a great way to sneak in extra veggies before you even start the day.

We used a variety of colors for the peppers, but you could go with any color you like! The green peppers have a bit more zest to them, while the red and yellow peppers have a bit more sweetness. We love a combination of all three – the colors are just so pretty together!

The easiest way to prepare the peppers is to slice the top off and then use a spoon to scoop out the seeds. If you like your peppers extra soft, you can always parboil them before filling them and placing them in the oven. We prefer then to be a little bit more firm, so we don’t do this step. We find they serve up slightly better when they are cooked like this.

These peppers are not only great for a weeknight dinner but also hold up very nicely for your weekly meal prep. So, next time you are at the store, grab a couple of extra boxes, and make some extra to enjoy at work or school!

  • 3 large bell peppers
  • 2 boxes Good Food Made Simple Steak & Black Bean Entree Meals
  • 1/4 cup shredded cheese

Toppings, optional

  • fresh cilantro
  • avocado
  • cilantro creme

Instructions

  • Preheat oven to 375 degrees F
  • Cut the top off of the peppers and remove seeds.
  • Heat the Steak & Black Bean Bowls through until just able to mix.
  • Evenly divide the steak & black bean bowls between 3 peppers.
  • Cover and bake for 35-40 minutes or until fork tender.
  • Remove from the oven and sprinkle with cheese.
  • Return to the oven (uncovered) until cheese is melted.
  • Serve and enjoy!
