Ingredients

  • 2 slices whole grain bread
  • 2 egg white patties cooked
  • 2 tsp mayo
  • spinach
  • red onion thinly sliced
  • 1 slice pepper jack cheese
  • 1/4 avocado sliced
  • salt & pepper if desired

Instructions

  • Layer 1 slice of bread with mayo, spinach, egg white patties, red onion, cheese and avocado.
  • Top with remaining slice of bread.
  • Slice in half and wrap in parchment paper to eat on-the-go!
