It includes all of the things a solid breakfast should have: carbs, protein, healthy fats, and fiber! Oh, and let’s not forget tons of flavor! That’s right! This easy, 7-ingredient breakfast dish is extra tasty, and extra quick to make! You can have this meal on the table in less than 30 minutes.

But, let’s be honest, breakfast fried rice isn’t only for breakfast! This dish works for lunch or dinner, too! It has enough staying power from the fiber-rich brown rice and protein-packed egg whites to keep you full for any meal of the day.

Love more veggies at breakfast? Go ahead and toss them right into this dish! Not only is breakfast fried rice easy, but it’s versatile too! You can add in anything that you’d like. Have leftover chicken? Swap that for the bacon. Want to add in some peas or diced peppers? Go for it! You can also swap the brown rice for white, jasmine, or basmati rice. But please keep in mind that the fiber won’t be as high, i.e., you might not stay full quite as long.

No matter how you serve it up, added veggies, breakfast, lunch, dinner, side dish, it is guaranteed to be a home run with everyone in the family! We won’t say anything if you decide to toss in a few more egg white patties because you are looking for more protein. We do the same thing!

  • 6 Egg White Patties
  • 6 ounces lean bacon
  • 1 medium onion, finely diced
  • 5 cups cooked brown rice, fluffed and cooled
  • 1/4 tsp sugar
  • 2 tbsp. tamari sauce (can sub with soy sauce if not gluten-free)
  • salt and pepper, to taste
  • 2-3 green scallions, chopped

Ingredients

  • 6 egg white patties
  • 6 ounces lean bacon cut into 1-inch pieces
  • 1 medium onion finely diced
  • 5 cups cooked brown rice cooled and fluffed
  • 1/4 tsp sugar
  • 2 tbsp tamari sauce can sub with soy sauce or coconut aminos
  • 2-3 scallions chopped
  • salt & pepper to taste

Instructions

  • Cook the egg white patties according to package directions. Set aside to cool.
  • Add the cut bacon into a skillet over medium heat and allow it to cook down until crispy. Once the bacon is done, remove it from the pan and set aside.
  • Add the diced onion to the skillet and cook until translucent. Next, add in the brown rice, and cook for 3-5 minutes. Break up any clumps with your spatula.
  • Cut up your egg white patties into small to medium chunks.
  • Add in your sugar, tamari, salt and pepper, if using. Give everything a good mix.
  • Once the rice begins to steam, it is done! Add in your cut up egg white patties, bacon, and scallions. Give everything a final toss and serve!

What do you do when you don’t have a lot of ingredients on hand? You get creative and use what you’ve got! This Bacon Scramble and Veggie Frittata was the product of “using what was in the fridge and freezer.” The result? A DELICIOUS breakfast option!

Life is hard right now, and finding all of your favorite ingredients can be challenging. But, that shouldn’t stop you from starting your day with a nutritious breakfast. It just requires a little more creativity. If you keep your freezer stock with your favorite frozen meals, then recipes like this should be a breeze!

The great thing about frittatas is that they are versatile when it comes to ingredients and when it comes to the meal in which you are enjoying them. This one-pan meal idea works for breakfast, lunch, or dinner.

Ingredients

We went with cherry tomatoes, spinach, and cheese as mix-ins with the bacon scramble bowl, but feel free to use your favorites! Broccoli, kale, peppers, and onions are all delicious veggie options. You can add in more bacon or sausage. Other cheeses such as feta and goat cheese give this a nice tang.

You can also swap out the bacon bowl for our Southwestern Veggie bowl to keep it vegetarian! Yes, we’ve got something for everyone around here! If you can’t find our Bacon Scramble bowl, the Turkey Sausage Bowl works just as well!

Serving

The Bacon Scramble and Veggie Frittata is delicious on its own! But, if you want to make a full brunch spread, we would recommend serving it with fresh fruit and oven-roasted potatoes. For lunch or dinner, try serving it with a side salad and a crusty piece of bread, if available.

Ingredients

  • 1 box Bacon Scramble bowl
  • 3 large egs
  • 1/3 cup milk

Instructions

  • Preheat oven to 350 degrees F.
  • Cook Bacon Scramble Bowl according to package directions. Set aside to cool.
  • Whisk together your eggs and milk.
  • Lightly oil a cast-iron skillet and place on the stovetop over medium heat.
  • Add your scramble bowl, tomatoes, and spinach to the skillet. Mix until spinach begins to wilt.
  • Add in half of your cheese and egg/milk mixture to the skillet.
  • Mix and then top with remaining cheese.
  • Place your skillet in the oven and bake for approximately 30 minutes or until set and golden.
  • Allow to cool slightly before slicing.

Taquito is another name for a small taco! These mini ‘tacos’ aren’t just meant for “Taco Tuesday,” either! They are easy enough to enjoy any day of the week!

Ingredients

We wanted to keep things simple since finding ingredients can be challenging right now. So, we used just three ingredients, four if you count the optional hot sauce, to make these! They are easy, delicious, nutritious, and affordable! That is just what we all need right now, too.

Cooking

We also went with the baking method instead of frying to keep them lower in calories and fat. But, feel free to deep fry them or even give them a go in your air fryer! Either option will give you that perfect crispy outside and cheesy, melt-in-your-mouth inside that you are craving!

Variations

If you have picky eaters in your house or people that don’t eat meat, you can swap out the Turkey Sausage Scramble Bowl for our Southwestern Veggie Scramble Bowl (yay for added veggies at breakfast!) or our Bacon Scramble Bowl for those that just “must” have bacon at breakfast, *us*.

We love serving them with guacamole for dipping and fresh fruit on the side.

Ingredients

  • 1-2 boxes turkey sausage scramble bowls
  • 4-6 small corn tortillas
  • 1/2 cup shredded Mexican blend cheese
  • hot sauce if desired
  • avocado oil spray

Instructions

  • Preheat your oven to 425 degrees F.
  • Line a baking sheet with parchment paper and set aside.
  • Cook your Turkey Sausage Scramble Bowls according to package directions.
  • Place 1.5- 2 tbsp. shredded cheese on the left side of your corn tortilla leaving about a 1/2 a thumbs length between the edge and the filling.
  • Place 3-4 tbsp of your cooked Turkey Sausage Scramble Bowl on top of the cheese.
  • Tightly roll up your taquito and place it on a baking sheet.
  • Repeat until all of your scramble bowl(s) is gone.
  • Spray with avocado oil.
  • Bake for approximately 20 minutes or until the outsides are golden.
  • Top with hot sauce, if desired.

Who says you can’t have egg rolls for breakfast? These Air Fryer Southwestern Veggie Egg Rolls are stuffed with all of the goods! They are filled with egg whites, roasted potatoes, organic corn, black beans, tangy salsa, and a pinch of cumin to kick up the heat!

Not only is this recipe fun, but it’s ready in a matter of minutes and requires on 3 ingredients. It sounds too good to be true, but we guarantee you it’s not! Heck, these are even easy enough to whip up during the week for a quick breakfast.

Cooked your Southwestern Veggie Scramble Bowls halfway and then evenly divide the filling between your 8 egg rolls. Roll up and then brush with avocado oil. Into the air fryer they go for 3 minutes and BOOM! You have yourself a simple, satisfying, and nutritious breakfast in no time. Pair with fresh fruit for extra fiber and a bit of sweetness.

These egg rolls are also great for taking on the go! They will last in the fridge for up to 4 days. Just make sure to allow them to cool completely before storing them. You can also add a paper towel to the bottom of your container to absorb any other moisture that might make them a bit soft.

Another option is to prepare a bunch in advance and freeze them. Follow the directions until you come to the step stating, “brush with avocado oil.” (Do NOT brush them with the oil.) Place them into a freezer storage bag and seal tightly. These will last up to 3 months in the freezer. When you are ready to make them, allow them to thaw and then place them in the air fryer according to the directions below (adjusting the time as needed). Serve as desired.

Ingredients

  • 2 Southwestern Veggie Scramble Bowls cooked for 90 seconds each
  • 8 egg roll wrappers
  • 1/2 tbsp avocado oil

Instructions

  • Place 1 coconut wrapper on a clean work surface in a diamond shape. Scoop 1/4 cup of filling onto wrapper about 1/3 of the way from the bottom. Roll from the bottom of the wrapper toward the top folding the bottom over the filling. Fold the sides in and continue to snugly roll to the top. Continue with remaining wrappers and filling to make 8 eggrolls. brush outsides of the egg rolls with avocado oil, if desired for extra crispiness.
  • Place 4 eggrolls in the basket of air fryer, seam side down. Fry eggrolls at 300ºF for 3 minutes. Repeat with remaining 4 eggrolls.
  • Serve with fresh fruit.
